Italian Sausage and Kale Baked Ziti: (3/4 cup of baked ziti per serving) 338 calories, 10g fat (4g saturated fat), 19g sodium, 43g carbs, 19g protein, and 6.5g sugar. Preheat oven to 375 degrees. Heat a large pot full of salted water for 12-ounces of ziti. In a second large skillet, sauté 1 pound of ground Italian sausage over medium heat for 8 to 10 minutes. Add 4 cloves of minced garlic and sauté together for 1 to 2 minutes. Remove pan from heat. Cook pasta al dente, drain, and return pasta to the pot along with the sausage, garlic, and then add 3 large handfuls of chopped kale (stems removed) to the mix. Gently toss until kale is dark green and slightly wilted. Pour half of the pasta in a greased baking dish. Sprinkle 1 cup of shredded mozzarella cheese, layer remaining half of pasta, and then top with another 1 cup of mozzarella. Bake for 20 to 25 minutes.
